Game Hens with Pancetta Bacon

Cornish Game Hens, those cute little birds that are usually available in the grocery store as frozen minature chicken shaped ice cubes can be a wonderful variation to chicken. Cornish Game Hens are sometimes thought of only for special occasions and although they certainly have their place at an elegant table, they are also perfect for everyday meals.

Cornish hens vary in size, so when selecting hens at the market, we usually choose smaller whole hens for big eaters and a half hen per serving for average to small appetites.

Baked Halved Cornish Hens

This month's issue offers two great recipes for game hens, Game Hens with Pancetta Bacon, a delicious entree with an Italian flare and Carmelized Game Hens with Honey, this recipe uses slow pan cooking to achieve a spectacular carmelized flavoring on halved hens.
