Zuppa Toscana

The history of Italian cooking is the foundation of a lot of food we enjoy today. In fact, the cooking of Italy has been referred to as the "mother" of all European cuisine. The Roman dish of honeyed eggs "ova mellita", gave it’s name to today’s omelette. Flour, crushed cheese, honey and eggs baked in an earthenware mold gave way to the modern day cheesecake. Many of your favorite dishes may have their roots in Italian cuisine.

Italian cooking is bold, simple and direct. There is a fierce respect for local Italian tradition even from neighboring Italian regions. The one thing that all regions in Italy have in common is that they all place the utmost importance on "fresh" food. Italian food is good, wholesome, hearty food that is designed to emphasize the natural flavors of the ingredients.

The main meal in Italy is served in the middle of the day and usually consists of several courses. First there may be a soup or risotto (like Zuppa Toscana or a Pumpkin Risotto). Next comes a fish or meat dish served with seasonal vegetables or a salad. Examples of this may be Chicken with Peppers or Beef Pot Roast with Cinnamon accompanied by Cabbage Stuffed with Mozzarella or a Fresh Mozzarella & Tomato Salad.

A traditional Italian meal will finish with local Italian cheeses and fresh fruit. On Sundays the meal will begin with anti pasti (a selection of salami, fish, olives, artichokes, Melon wrapped in Prosciutto and other savory appetizers like a Cheese Soufflé Mold), and end with a delicious dessert of ices, cakes, pastries, espresso and liqueurs.
