In
doing research for this article I spoke with a good friend
of mine who has spent a great deal of time in Israel studying
her Jewish heritage. I figured if anyone could give
some
helpful advice on creating a wonderful gluten-free Passover
meal she would be the one. As I educated her on what
the gluten-free diet entails and she educated me on what is
kosher for Passover, we discovered that it is much more difficult
than you might at first think. Not only are there different
Jewish heritages that follow different rules for Passover,
but the traditional meals served at a Passover feast are not
easily converted to follow the gluten-free diet (primarily
due to the common use of Matzo meal).
Despite the challenges, we came up with
several delicious recipes that are Kosher for Passover
albeit not completely traditional, but equally as wonderful.
