Ahh
the
Caribbean. Close your eyes and transport yourself to the sunny
beaches of Jamaica. Feel the sand between your toes, smell the
salty, tropic air, feel that warm breeze wrap around your body
and imagine the soothing sound of the waves crashing on the beach.
The reggae band is playing a rhythmic tune in the background causing
your feet to uncontrollably tap to the beat. And lets not
forget the magical island cuisine
tempting your palette with
the complex flavors of tropical fruits and spicy peppers native
to this enchanting island.
One
of the largest islands of the Greater Antilles, Jamaica is a beautiful
island with mountainous terrain, dense with vegetation, accompanied
with great natural harbors.
Jamaica
is not only known for tourism and reggae music, but also for its
agriculture. Abundant vegetation indigenous to the island like
palm and pimento (allspice) trees along with the plentiful fruit
and vegetable crops (bananas, citrus fruits, corn, peppers, ginger,
coffee, mangoes and more), naturally influence the wonderful Jamaican
cuisine.
One
of the most popular dishes of Jamaica is Jerk Chicken. Jerk is
actually a seasoning/marinade used to infuse a spicy, complex
flavor into meats and vegetables. (The name is believed to come
from the term for dried meats in Caribbean cooking.) Due to the
intense heat from the peppers, traditionally it is served with
Johnnycakes to tame the heat. Also, you may find a nice Chenin
Blanc will also offset the spicy peppers.
