Best Light Summer Dishes!

Let’s face it…it’s hot outside! Now’s the time to look for light meals that won’t weigh you down — and preferably meals that don’t require the oven or stove-top! There are many wonderfully light gluten-free dishes that can be prepared with ease. Salads are the obvious first choice for a light summer meal. But just because you opt for salad for dinner, doesn’t mean that the salad has to consist of only greens and a few summer vegetables. Get creative. Top your salad with grilled meats or fish, roasted peppers, exotic vinaigrettes and dressings. Add a touch of fruit for an interesting flavor contrast.
