Zucchini with Pesto

Even though zucchini is most commonly a late summer vegetable, there is still an abundance of zucchini readily available in most super markets during the winter season. Zucchini and yellow squash are wonderful, quick sides for poultry, meat and fish. Their mild, sweet flesh are excellent when paired with tomatoes, onions, peppers (both sweet and spicy), garlic, oregano, marjoram, basil, parsley, dill, rosemary, sage, tarragon, lemon, cheese, butter, olive oil and capers.

To prepare zucchini, simply rinse and trim the stalks. Slice or cut the zucchini in small cubes or matchsticks. Cook the zucchini as quick as possible by steaming, boiling or sautéing — regardless of the method you choose you should only have to cook the zucchini for 2-4 minutes. Make sure to serve your zucchini just tender and not limp and over-cooked.
