The traditional ‘gratin’ is a dish made from thinly sliced potatoes covered with a Bechamel sauce and topped with bread crumbs or grated cheese, then baked or broiled. In fact, the word, gratin, translated from French, means crust. More modern gratins include almost anything that can be thinly sliced and layered with a cream sauce. The American version of Potatoes au gratin would be Scalloped Potatoes.
Gratins are a perfect dish for holiday entertaining. Generally made in large portions, they can serve many guests and offer a hearty and satisfying accompaniment to a variety of entrees.
Gratins are also suited for holiday meals as they are often better re-warmed. A gratin that has been made a day ahead and the re-heated before serving will tend to solidify somewhat and be easier to cut and serve.
