With the holidays upon us, ‘tis the season to break out the pie pans, cake pans and that ol’ faithful stand mixer! After all, what would the holidays be without sweet and decadent treats? As you’ve probably noticed, there are now many options for gluten-free mixes on the market. Some deliver pretty respectable results however I am a true believer that you can make much more beautiful and delicious holiday treats that everyone at your table will enjoy (whether gluten-intolerant or not).
The first challenge in nearly all baking is to find a good gluten-free flour mix. Once you find one that you like, and one that is fairly versatile (more like an all-purpose), than baking gluten-free really becomes as easy as it was prior to those non-gluten-free days. Over the past 10 years we’ve experimented with many flour mixes and many recipes for gluten-free flour. The challenge I’ve always run up against with recipes for gluten-free flour is that they typically call for more of this or that depending on what you are making (cookies vs. cakes, for instance). And the truth is that I prefer to just have a canister of flour on my counter that will work for everything – just like “all purpose flour”. Fairly recently I came across Jule’s All Purpose Gluten-free flour and I’ve done some experimenting with this flour. I’ve had tremendous success with cakes and cookies and fairly good results with pies. As of this moment this would have to be my flour of choice since the consistency and texture of the baked goods made with this flour is truly superb. The other thing I really like about this flour is that you can pretty much use it as a straight substitution for any recipe calling for “all purpose flour”. Other flours I’ve worked with before I’ve had to increase the leveners or add more moisture to get the consistency of the final product right. However with Jule’s flour I haven’t found that to be the case.
