Planning a holiday feast can sometimes be overwhelming, especially if you are trying to accommodate a group of non-gluten intolerant and gluten-intolerant people. My suggestion is to just focus on naturally gluten-free foods utilizing quality pure foods. If you try and stick to this principal the end result will undoubtedly be stellar – because the food tastes as it should! Gone will be the concerns of, “does it taste gluten-free?”, and instead you will be confident that your dish is delicious because you used good quality whole foods that just happen to also be gluten-free.
In saying this there may be some areas where you want to make exceptions, namely dessert. Everyone usually looks forward to desserts during the holidays and usually that involves cakes, cookies and the like. There are some great gluten-free flours now on the market that provide the same convenience as all purpose wheat flour. My current favorite is Jule’s All Purpose Gluten Free Flour. My experience is that you can use this flour as a straight cup for cup substitution for all purpose wheat flour. I would only caution still to select recipes that do not call for over 2 cups of flour – this makes it a bit more tricky.
