Roasted Garlic Mashed Potatoes with Fried Shallots

Who doesn’t like mashed potatoes? Everyone loves mashed potatoes! Mashed potatoes is our ‘in a pinch, no thinking, always delicious, goes with just about anything’ side dish that is always welcome at the dinner table.

This month we bring you a few new twists to our favorite standby. But before we get to the recipes, we’d like to share some tips on making great mashed potatoes every time.

First, start with great potatoes! You can use any type of potato for mashed potatoes, but potatoes differ in the amount of starch they have and therefore will differ in consistency and texture when mashed. We prefer organic russet potatoes, which are high in starch and produce a fluffy, light mashed potato.

Mashed Potatoes with Glazed Nuts

To thin potatoes into the perfect velvety texture, we use half & half instead of milk or cream. Half & half will add just the right balance between creamy and too thin.

When adding butter, half & half or other ingredients, make sure they are at room temperature, or warm, this will keep your potatoes from cooling off.

And finally, whatever flavorings you add, be sure to salt and pepper to taste as your final step.
