International Cuisine: French

For the month of February we find ourselves thinking about love. Romantic dinners for two, sweetheart candies and desserts and so it seems only fitting to feature the rich and sometimes sinfully decadent flavors of French cuisine.

This month we’ve selected a collection of recipes with a French flare from appetizers to desserts; from the simple to the involved, but in every case, delicious, gorgeous food!

We begin with appetizers that are simple in their presentation and exquisite in their taste. ‘Shrimp Toasts’ are incredibly easy to prepare and boast their secret ingredient that will have you oooing and ahhhing for more, Garlic, Shallot Butter. The topping for ‘Sun-Dried Tomato & Olive Toasts’ can be prepared in minutes. Bake a baguette of gluten-free French bread and you have an elegant appetizer perfect for any occasion.

For a first course, we offer ‘Cream of Carrot and Ginger Soup’. Velvety smooth with an amazing flavor that you must try!

We feature four entrees; ‘Salmon Fillet with Zucchini, Carrots and Shitake Mushrooms’, ‘Pan Seared Steak with Cherry Wine Sauce’, ‘Poached Chicken with Winter Vegetables’ and ‘Pepper Crusted Rib Roast with Fried Potatoes’.

The magnificent salmon fillet is prepared with julienne vegetables inside a parchment packet that is crimped together and then filled with air and baked. The pan-seared steak is served with an extraordinary Cherry Wine Sauce that is really two sauces combined and finished into one extravagant sauce.

The poached chicken is French bistro style, a lovely anytime meal.

And finally, the rib roast begins with a spectacular cut of beef that is completely encased with crushed peppercorns and pan -fried to perfection.

And what’s for dessert? Two delectable chocolate wonders, ‘Chocolate Mousse Cake with Cinnamon Cream and Truffles’, both ‘Rich Chocolate Truffles’ and ‘Bourbon Espresso Truffles’.
