little one serving treats, muffins are as delightfully easy
to make as they are to eat! Gluten-free muffins are no exception.
Anyone can make great gluten-free muffins.
They require no special ingredients and no special kitchen
tools. A muffin pan, a spoon, a bowl and an oven are all that
is needed to make fabulous muffins.
We have been told, (and we agree!), that
our gluten-free muffins are indistinguishable from the gluten
variety. One of our secrets is the gluten-free flour that
we use, the Gluten Free Pantrys Country French Bread
Mix. We use this mixture as a straight substitution for flour.
Another, is the use of vegetable or canola
oil instead of butter. The use of oil will make muffins moist
and almost gluten-like. Many of our recipes also
include dairy products like buttermilk, crème fraiche
or sour cream. These ingredients also serve to lighten
the end result.
For professional looking muffins, use a
6 muffin pan instead of 12. This will produce large, voluptuous
muffins just like the ones served at your favorite coffee
bar.
Muffins can be served with plain, unadorned
tops or decorated with a variety of toppings including crumb
toppings, raw sugar, glazes and even frostings. You can easily
transform a delicious breakfast treat into a great dessert
by glazing or frosting the same muffin.
Get Creative
Once you have the general formula for a
great muffin, its easy to improvise and create your
own signature muffins. Simply choose ingredients that compliment
each other, like chocolate and bananas, orange and almonds,
berries and nuts, lemon and raspberry and the list goes on.
