Along with reducing meat and poultry portions, add or increase salad portions. Ingredients for salads are inexpensive, varied and can last through several salads. Tuscan Ossobuco
Last but certainly not least, we suggest Tuscan Ossobuco. The main ingredient is veal shanks. You can substitute with beef shanks, but either way, shanks are usually very inexpensive and go a long way for flavor. There is nothing plain about this dish; we often serve it for company.
