Easy Everyday – 5 Great Weeknight Meals
These days it seems as if time is a scarce resource. Finding time to prepare a nutritious balanced meal is not only difficult but sometimes impossible. I often find that by the time I have finished with work and gathered my kids from their various extracurricular activities that I come home and open the fridge and say, “Now what?” Experience has taught me that if I don’t plan ahead and do my grocery shopping on the weekend for the full week, then often that question “Now what?” is answered with a less than nutritious meal, eating out or something pathetic like cereal! I have a feeling I’m not alone on this front so I thought for this month’s article on easy everyday meals we should highlight a week’s worth of great weeknight meals that are easy to prepare, delicious and satisfying for the whole family. If nothing else, it is always great to get inspiration for some new menu ideas and get out of that recipe rut that is so easy to fall into!
