I’ll try to not make this a tribute to Udi’s, but it’s true, Udi’s bread products have transformed our household with the addition of toast in the mornings and for the first time in over 12 years, delicious sandwiches that behave like sandwiches!
With sandwiches back on the menu we couldn’t resist experimenting with new flavor ideas using bread and bagels. This month we bring you three amazing hot sandwiches that are have a twist on the old standard:
Grilled Cheese & Pesto: This sandwich gives an Italian flare to an old favorite! Easy and delicious; grilled cheese sandwiches will never be the same!
Fried Egg with Pancetta & Apricot Jam: This is to die for! Once you’ve tasted an egg sandwich this way, you’ll never go back!
Hot Dogs & Caramelized Apples: This is now my favorite all time sandwich! We know it sounds odd, but the flavor is out of this world!
Grilled Cheese & Pesto
Serves 4
Ingredients
- 8 slices Udi’s Whole Grain Bread
- 3 Tablespoons softened butter
- 8 thin slices cheddar cheese
- 1/4 cup pesto
Directions
Preheat oven to 425 degrees F. Spread butter on one side of each slice of bread and place 4 slices of bread, butter side down, on a baking sheet. Top each with a slice of cheese then spread a tablespoon of pesto over the cheese and top with another slice of cheese. Top each with the other slice of bread, butter side up. Bake for 4 minutes then remove from oven and turn sandwiches over and bake for another 4 minutes. Remove and serve.
Fried Egg with Pancetta & Apricot Jam
Serves 4
Ingredients
- 4 Udi’s bagels
- 8 slices pancetta
- 4 thin slices cheddar cheese
- Kosher salt and fresh ground pepper
- 4 eggs
- 1/4 cup apricot jam
Directions
Fry pancetta in a heavy skillet on both sides until crisp on both sides. Remove to a plate with paper towel. Fry eggs in same skillet on both sides, until yolks are soft but not liquid. Sprinkle eggs with salt and pepper.
Cut bagels in two and toast in toaster. Place cheese slice on cut side of top half of bagel and top with fried egg then 2 slices pancetta. Spread jam on bottom of cut side of bagel and place on top of pancetta. Flip sandwich over and serve.
Hot Dogs & Caramelized Apples
Serves 2
Ingredients
- 1 Tablespoon butter
- 1 Granny Smith apple, peeled, cored and cut into 1/2” wedges
- 1-1/2 Tablespoons brown sugar
- 2 gf hot dogs (we used Hebrew Nationals)
- 2 Udi’s bagels
- 2 slices cheddar cheese
- 2 Tablespoons gf BBQ sauce
Directions
Preheat oven to 450 degrees F.
Melt butter in a medium skillet. Add apples and cook over medium heat until softened, about 5 minutes. Add brown sugar and cook over low heat until apples caramelize, about 10 minutes; stirring occasionally.
Grill hot dogs until lightly charred on all sides. Cut each hot dog in half and then in half lengthwise.
Cut the bagels in half and lightly toast in a toaster. Place bottom of bagels on baking sheet, cut side up. Spread bagels with BBQ sauce then top with cheese slice, hot dogs (4 pieces per bagel) and top with caramelized apples. Top with bagel top. Place in oven and bake for 3 minutes; remove and serve immediately.
