Perfect Prime Rib

Prime rib, or rib roast is truly a magnificent meal fit for a special occasion. An expensive cut of meat, prime rib is well marbled and naturally tender. Rib roasts can be prepared both with or without the rib bones. The most impressive, the Standing Rib Roast, has the rib bones in tact, which also act as a natural roasting rack.

Prime Rib with Roasted Garlic-Wine Sauce

For our Prime Rib with Roasted Garlic and Wine Sauce, we chose a medium sized roast and roasted it in the traditional way. We prepared a rich, savory sauce to accompany our meal, made with a dry Cabernet, roasted garlic and fresh thyme. This sauce was a fabulous finish to a truly memorable Prime Rib dinner and much more elegant than with the traditional Au Jus.

Prime rib is usually preferred rare to medium-rare. To ensure that our roast was not over-cooked, we removed it from the oven when the internal temperature reached 115 degrees F. We covered the roast and let it set for 30 minutes. The setting period is a key element to a delicious finished roast, as the roast will continue to cook while it rests.
