Picture Perfect Muffins, Quick Breads and Cakes

We have had so much success with muffins, quick breads and cakes, we thought we would share our tips on how to perfect your next baking venture.

  • The main ingredient, flour, will determine the success of your recipe. We use the Gluten Free Pantry’s Country French Bread Mix as a straight substitution for flour. (We have no affiliation with the Gluten Free Pantry).
  • To assure that your muffins, bread or cake will be moist and not gritty or crumbly, substitute vegetable or canola oil for butter.
  • Add an additional egg to any recipe, and your baking will rise more normally.
  • To muffins, quick breads or cakes, add yogurt, crème fraiche, buttermilk, sour cream or pureed vegetables or fruits, like apple sauce, pureed pumpkin, etc. This will moisten and lighten the batter.
  • Allow a little additional time for baking to accommodate the additional wet ingredients.
