The
thought of Irish Cuisine, for many people, conjures up images
of boiled potatoes, Irish stew and lamb. On the contrary,
weve experimented with lovely Irish based recipes that
transform some of these same ingredients into sensational
culinary treasures.
Potatoes are infused into chicken or fish
creating a marriage of flavors that overlap and blend to produce
a symphony of tastes that can be individually identified but
seem to produce a new taste created from the combination of
the ingredients.
Another common ingredient is alcohol. Irish
whiskey or Irish spirits is fabulous used to deglaze a pan
and gives an aromatic nuance to cream sauces.

typical pies, this dish has no crust but is layered in a casserole
and topped with mashed potatoes and then baked. It is a perfect
blend of cod, shrimp, tomatoes and mashed potatoes that will
literally melt in your mouth!
Chicken
Vermouth is a lovely chicken dish that roasts bathed
in vermouth and a hint of fresh tarragon.
And for dessert, a must try is Irish
Currant & Raisin Cake. This delightful cake
can be served alone or topped with a cream sauce.
