January is officially here and winter has definitely settled in…at least in my neck of the woods. During these cold winter months there is something to be said for a hearty warm dish like an ol’ fashioned pot roast. Roasts are so wonderful since they are usually simple to prepare and once the bulk of the work is done they do the rest of the work on their own in the oven or on the stovetop.
In my mind, what makes a delicious roast is the tender, melt in your mouth meat accompanied by a delectable sauce and winter vegetables. There really are few things that will match this during the winter.
Pot roast is usually something you would not think of as a “company-worthy” meal, however if you use quality ingredients, like good wine or port for your braising liquid then the end results will be so good that even a finicky guest will appreciate your roast.
