Outrageous Roasted Peppers

There is nothing quite like the aroma of roasted red peppers! Roasted peppers add a smoky layer of flavor that cannot be duplicated by anything else. The sweet crisp taste of fresh bell pepper completely transforms when roasted into a sultry, smoky almost seductive ingredient. OK, maybe not ‘seductive’, but undeniably delicious at the very least. Roasting a pepper is the easiest way to remove the skin, soften the pepper and to produce an incredible smoky flavor.

Roasting a pepper is quite simple to do. We recommend roasting a few peppers at a time (even if your recipe only requires one roasted pepper), because it is so nice to have roasted peppers on hand for a wonderful addition to salads, grilled meats, grilled fish, grilled poultry, vegetables, appetizers and soups. They will keep covered in the refrigerator for several days.

There are two basic methods for roasting peppers — under a broiler or over an open flame.

To roast a pepper in the broiler:

Preheat your oven to broil. Place whole peppers on a dry baking sheet and broil until the skin turns brown to black. Turn the peppers and broil until all sides are blackened. Remove the peppers from the oven and place immediately in a bowl and cover with plastic wrap. Set aside for 10 minutes. The heat from the peppers will create steam that will separate the skin from the flesh. Place the peppers on cutting board and peel off the skin. The skin should peel away easily. Remove the seeds and the stem and the peppers are now ready for use.

To roast a pepper over an open flame:

Place the pepper over an open flame — this could be on a grill or actually held with tongs over a flame. Turn the peppers until all sides are blackened. Proceed as described in the instructions above.
