The Lighter Side of Summer

During the hot days of summer, often the last thing you crave is a big, heavy meal. There are many wonderfully light gluten-free dishes that can be prepared with ease. Salads are the obvious first choice for a light summer meal. But just because you opt for salad for dinner, doesn’t mean that the salad has to consist of only greens and a few summer vegetables. Get creative. Top your salad with grilled meats or fish, roasted peppers, exotic vinaigrettes and dressings. Add a touch of fruit for an interesting flavor contrast. Some of our favorite salads that are light but still hearty enough to be considered a complete meal are; Grilled Thai Salad with Mango & Ginger, Grilled Pork Tenderloin Salad with Avocado & Grapefruit, Mesclun with Watermelon, Feta & Toasted Pine Nuts, Fresh Orange Salad with Sautéed Scallops, and Grilled Shrimp & Mango Salad with Orange Dressing.

Korean Pork Kebabs

If you are not the salad type, or if you think that a salad alone will not completely satisfy you, you may want to consider some delicious summer soups. This month we have two delicious new soups you should try out. First we have a Fresh Tomato Soup. This soup is made from a fresh, homemade tomato stock and then topped with fresh tomatoes, basil and a touch of lemon zest. And next we have a Roasted Yellow Pepper Soup with Cilantro Puree & Creme Fraiche, a wonderful marriage of flavors complimented by a dollop of crème fraiche. From our archives we have many other wonderful summer soups to choose from. Check out our Cold Tomato Soup, Crab & Corn Chowder, Cream of Shrimp Soup, or our Italian Sausage Soup.

Grilled Thai Salad with Mango & Ginger

For a different alternative there are many other light meals that are light and satisfying. We invite you to try our wide array of kebabs and skewers. This month we have Grilled Chicken Skewers with Caramelized Pineapple Sauce, Korean Pork Kebabs, and Tuna Kebabs, plus many other kebabs and skewers to choose from within our recipe archives. Some other light favorites are our Italian Steak with Fresh Herbs, Grilled Portabella Burgers and a Chicken Pasta Salad with Tomatoes & Kalamata Olives.

As you can see there are many lighter dishes to choose from. All delicious in flavor and most are naturally gluten-free (requiring few or no gluten-free substitutions). This summer set the table outside, pour a nice refreshing drink and enjoy a light and tasty meal.
