the hot days of summer, often the last thing you crave is
a big, heavy meal. There are many wonderfully light gluten-free
dishes that can be prepared with ease. Salads are the obvious
first choice for a light summer meal. But just because you
opt for salad for dinner, doesnt mean that the salad
has to consist of only greens and a few summer vegetables.
Get creative. Top your salad with grilled meats or fish, roasted
peppers, exotic vinaigrettes and dressings. Add a touch of
fruit for an interesting flavor contrast. Some of our favorite
salads that are light but still hearty enough to be considered
a complete meal are; Grilled

think that a salad alone will not completely satisfy you,
you may want to consider some delicious summer soups. This
month we have two delicious new soups you should try out.

a touch of lemon zest. And next we have a Roasted
