Grilling’s in the air…that irresistible aroma that just seems to bring people together. Although I believe that practically anything can be grilled, some things are just a natural over the coals, like fish. Grilled perfectly, fish needs no accompaniment, but we think the perfect sauce can push grilled fish right over the top into spectacular!
Sauces for grilled fish
Aioli: Aioli is a sauce usually served with fish. It is traditionally made with oil, garlic, mustard and is emulsified. Classic aioli is made without egg, but we do use egg in our recipes. Aioli with egg is similar to a flavored mayonnaise.
Salsa: Salsas are terrific with grilled fish and can be a varied as the fish itself. Salsas with mango, or other fruit are perfect compliments to the heat from jalapeno peppers or other peppers in salsa.
Herb Sauce: Herb sauces are generally fresh herbs combined with sour cream, mayonnaise, lemon juice, garlic and other flavorings.
Asian Sauce: Asian sauces usually consist of soy sauce (be sure to use gf), mustard, rice wine, fresh ginger, scallions and even wasabi.
