Summer is officially here and by now you’ve surely dusted off your barbecue and started to enjoy the great flavors of grilled food. Most people think of the grill as a cooking device mainly devoted to cranking out hamburgers, grilled steaks and other meats, poultry and fish, but the truth is it can be so much more. Not only can your grill deliver wonderful entrees but it also can do a fabulous job of adding tremendous flavor to appetizers (and not to mention less clean up!).
Since appetizers tend to be more time sensitive – company is arriving and you are still working on the entree preparations, and you want your appetizers to be served in a timely fashion and be warm – it is important to make sure that all your ingredients for your appetizers are prepped ahead of time. If you are making something that will be served with a sauce, make sure that you prepare all the sauces and any basting liquids or marinades well in advance. Make sure everything is trimmed, rolled, skewered, or whatever the case may be – so all you have to do is grill and serve.
Below you will find our favorite grilled appetizers that are sure to become yours as well:
Grilled Artichokes |
So simple and so delicious. Prepare an artichoke just as you would steamed. Let cool and cut in half lengthwise. Scoop out the tender leaves and the hair. Prepare a mixture of ¼ cup olive oil and 2 minced garlic cloves. Grill the asparagus cut side down first, then baste with the olive oil mixture for about 3 minutes per side. Serve with melted butter or mayo.

BBQ Bacon Wrapped Shrimp |
A party favorite – this will be gone in seconds so be sure to make extra if you have a bunch of shrimp lovers. These yummy shrimp are wrapped in partially cooked bacon and basted with homemade bbq sauce, then grilled to perfection.

Grilled Apples with Pancetta |
Apple slices wrapped with pancetta and grilled until the apples are just soft and the pancetta is crisped.

Grilled Chicken & Mushroom Quesadillas |
This takes a little more effort – but the results are well worth it. Prepare the mushroom and chicken filling ahead of time, grate the cheese and then all elements will be ready for a quick preparation at the grill. |

Grilled Stuffed Jalapeno & Sweet Peppers |
My husband’s favorite is the jalapeno’s – but BE CAREFUL – these can be very hot. For those who like it milder, try the stuffed sweet peppers. Both are delicious but you have to really like the heat for the jalapenos.
