No, we didn't make a mistake, we did mean BEER can chicken! Thanks to Anheuser Busch's Red Bridge beer, beer is once again widely available to the gluten and wheat intolerant. With a little improvising, Beer Can Chicken is now a recipe we can enjoy. Red Bridge beer comes in a bottle, so for our recipe which requires a 'can', we've simply purchased a large 24oz. can of ice tea (you can use any can that does not include a gluten drink) and discarded the tea. Rinse out the can and you've got the perfect tool for this recipe. Grilling chicken this way is fun and absolutely delicious! It's easy to get moist, succulent chicken every time! Beer can chicken also makes for great conversation for any outdoor party. For large parties, grill several chickens at once. You can season each chicken with a different rub and entertain your guests at the same time!
Things you'll need for this recipe:
- 16-24oz. soft drink can
- Can opener
- 1-12oz bottle of gf beer
- Rub of your choice
- 1 whole chicken
- Grill
Step 1:
Prepare a grill. If using a gas grill, turn both sides of grill to high. If using a charcoal grill, heat coals until hot.

Step 2:
Wash the chicken inside and out; pat dry.

Step 3:
Empty a 16 or 24oz. can of gf soft drink or ice tea and rinse the can. With a hand held can opener, punch a few extra holes in the top of the can. Pour the beer into the can. |

Step 4:
Rub your favorite 'rub' all over the chicken including inside the cavity. Pour about 2 Tablespoons rub mixture into the can.

Step 5:
Slide the can inside the chicken cavity so that the chicken will stand upright.

Step 6:
Carefully carry the chicken to the grill and place over indirect heat. If using a gas grill, place the chicken on the off side and turn the 'on' side to medium. If using a charcoal grill, place chicken opposite coals.
Close the grill lid. Chicken should cook for 2 hours or until internal temperature reaches 180 degrees F.

Step 7:
Carefully remove chicken from the grill and remove can from chicken. Let chicken rest for 5 minutes then carve and serve. Your Beer Can Chicken will be delicious just as it is or you can serve it with gf barbecue sauce.

To get you started, here is a rub and barbecue sauce recipe:
BBQ Poultry Rub
Makes 3 cups
Ingredients:
- 1/2 cup garlic salt
- 1/2 cup onion salt
- 1/2 cup maple sugar
- 1/2 cup can sugar
- 1/2 cup paprika
- 2 Tablespoons lemon pepper
- 2 Tablespoons minced garlic
- 2 Tablespoons lime zest
- 1 Tablespoon parsley flakes
- 1 teaspoon cayenne pepper
- 1/2 teaspoon ground anise
- 1/2 teaspoon ground ginger
- 1/2 teaspoon cinnamon
Directions:
Combine all ingredients together and mix well. Rub generously on chicken.
All-Around BBQ Sauce
Makes 2-1/2 cups
Ingredients:
- 3/4 cup crushed pineapple
- 1/2 cup gf catsup
- 1/2 cup water
- 1/4 cup chopped onion
- 3 Tablespoons vegetable oil
- 2 Tablespoons gf brown sugar
- 2 Tablespoons lemon juice
- 2 Tablespoons wine vinegar
- 2 tablespoons gf soy sauce
- 1 Tablespoon gf mustard
- 1 teaspoon salt
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon ground ginger
- 1/4 teaspoon gf hot sauce
- 1/4 teaspoon garlic powder
Directions:
Place all ingredients in a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes stirring occasionally. Sauce can be stored in refrigerator for up to one week and frozen up to 3 months.
