Mexican Burgers

Last year I was talking with someone at the GIG convention in North Carolina and we were discussing what he missed most since he started eating a gluten-free diet. I remember him saying that he would pay thousands of dollars for a hamburger — and of course he meant the kind with the perfect bun and all! It started me thinking about burgers and how we could bring them back into our lives without sacrificing the taste we all remember.

In my quest for the perfect gluten-free burger, I decided to forgo the bun altogether. Granted there may be gluten-free buns that come close, but so far, I haven’t tasted any that truly resemble "the real thing". The result of these bun-less burgers greatly exceeded my expectations. They are so tasty, not to mention very gourmet looking, that no one in our family even missed the bun.

The Gouda Burger
Our first triumph was The Gouda Burger. One bite into this elegant burger and you’ll immediately experience an explosion of flavors. The first layer is a slice of ripe beefsteak tomato, followed by a grilled or pan fried burger, herbed mayonnaise, Gouda cheese, sautéed Shiitake mushrooms, red onion and mixed greens. This truly is a wonderful burger for even the most finicky burger lover.
