If you’re like me, by now you’ve dusted off the grill and are revisiting all the reasons that grilling is one of your favorite methods of cooking. Summer time and grilling go together like peas and carrots as Forrest Gump would say and nothing says summer like the smoke from a grill as it floats over the backyard fence on a warm summer’s day.
Once we get into the grilling swing of things, it seems like there is nothing that can’t be cooked on the grill including vegetables, fruits, desserts and even muffins! That’s right, this month we offer an amazing recipe for grilled gluten-free cornbread muffins!
Everyone has their favorite grilling recipes that are tried and true and reappear every summer. This month we’ve prepared a collection of new and somewhat unique grilled recipes that we hope will become your new favorites.
Grilled Cornbread Muffins
These muffins are easy to prepare and bake in the grill in just 20 minutes. Placed over indirect heat, they can be cooked along side any entrée of your choice! |

Grilled Scallops with Fresh Corn Saute
This may be my favorite way to enjoy scallops! Grilling adds a lovely flavor and the scallops are perfect served with the seasons’ fresh sweet corn sautéed with onions and red bell peppers. |
Grilled Pork Tenderloin with Jalapeno Butter
Quick and easy, the tenderloin is tender and bursts with flavor as the jalapeno butter melts into the meat imparting a spicy nuance with a little heat. |

Cornflake Grilled Chicken
A unique recipe for grilled chicken that everyone will love! The chicken is rubbed with Pickapepper sauce (a Jamaican sauce of mangos, onions, peppers and raisins) then marinated in buttermilk and garlic. The finishing touch after grilling is a brushing of melted butter and then the chicken is rolled in crushed gluten-free cornflakes! This dish is spectacular! |

Grilled Vietnamese Style Chops
These chops are the perfect blending of garlic, honey and the secret sauce; fish sauce. Serve with steamed rice and grilled asparagus seasoned with sesame oil and a sprinkling of toasted sesame seeds. |
