Low Fat, Casein Free & Lovin’ It
Looking for a delicious, low-fat, gluten-free & casein free summertime dessert? Well, you’ve come to right place! This month for our GFCF feature we’d like to highlight two delicious summertime desserts that everyone in your family will love – and they are easy to make!
Low Fat Frozen Peach & Cherry Yogurt
Ingredients:
- 8 ounces canned peaches, reserve juice
- 8 ounces canned pitted cherries
- 2 cups low-fat gf vanilla soy yogurt
- 1/4 cup sugar
Directions:
Drain peaches and reserve 1/2 cup of juice. Drain cherries. Place peaches, reserved juice, cherries, yogurt and sugar in a food processor and process until blended, but fruit is still chunky. Pour into the freezer bowl of an ice cream maker and mix for about 30 minutes. Transfer to a sealable container and freeze to desired firmness.
Mango Sherbet
Ingredients:
- 1/2 cup sugar
- 1/2 cup water
- 3 large, ripe mangos
- Juice of 1 lemon
- Juice of 1 orange
Directions:
In a small saucepan, combine sugar and water. Bring to a boil over medium-high heat until syrup is clear, about 2-3 minutes. Set aside.
Peel mangos and cut fruit from seeds.
Add mango to a food processor and puree.
With blades running, add cooled syrup to pureed mango along with lemon and orange juices. If the mixture seems tart, add more sugar to taste.
Pour mango mixture into a bowl, cover with plastic wrap and refrigerate unti mixture is cold.
Transfer to an ice cream maker and follow manufacturer’s instructions.
