Gluten Free French Toast
Just in time for Father’s Day we have a special treat for you. Recently we have had the pleasure of experimenting with UDI’s bread and have discovered that it makes great gluten-free, casein-free French toast. We’ve tried both UDI’s multi grain bread and UDI’s white sandwich bread and our personal preference for French toast is using the white sandwich bread. The bread does a great job soaking up the batter and still holds it’s shape and texture once cooked. Below you will find a basic recipe for GFCF French toast – make this extra special for Father’s Day by topping it with fresh strawberries and powdered sugar.
- 6 slices UDI’s white sandwich bread
- 4 eggs, lightly beaten
- 2/3 cup soy milk
- 1 teaspoon vanilla
- Pinch of kosher salt
- 1/4 teaspoon ground cinnamon
- Dash of freshly grated nutmeg
- 2 tablespoons unsalted butter
Whisk the eggs, soy milk, vanilla, salt, cinnamon and nutmeg together in a shallow dish. Melt the butter in a large skillet over medium heat. Place one or two bread slices in the egg mixture and turn until thoroughly saturated but not falling apart. Place as many bread slices onto the skillet as will fit without overcrowding and cook until the underside is golden brown. Turn the bread and cook until the second side is golden. Serve immediately with warmed pure maple syrup, fresh strawberries and powdered sugar.
