Summer is upon us and it’s time to put to bed those heavier dishes that we have enjoyed over the winter and spring months. There are many wonderfully light, gluten-free dishes that can be prepared with ease. Salads are the obvious first choice for a light summer mea, but just because you opt for salad for dinner doesn’t mean that the salad has to consist of only greens and a few summer vegetables. Now is the time to get creative. Top your salad with grilled meats or fish, roasted peppers, exotic vinaigrettes, dressings or a variety of cheeses (like Parmigiano Reggiano, feta, queso fresco, etc.). Or add a slight touch of sweetness and flavor contrast with fresh fruit. Some of our favorite salads that are light but still hearty enough to be considered a satisfying meal are:

If you are not the salad type, or if you think that a salad alone will not satisfy you or your family, there are many other delicious light options.
