Summer Vegetables

Finally those savory summer vegetables you’ve missed all year are back. Just in time for outdoor grilling and entertaining, or just to add the fresh taste of summer to your favorite entrée. Fresh sweet corn, snappy green beans, juicy tomatoes and delicious summer squash. These fresh vegetables will add a crisp dimension to any recipe. Try uncooked corn, cut off the cob, in vegetable salads; or stir-fry it with onions and red peppers. And everyone’s summer-time favorite; grilled corn-on-the-cob. Grill it in the husks or wrapped in foil. Smother in butter flavored with your favorite herb or spice.

Zucchini and yellow squash are also wonderful when grilled. Slice them lengthwise, or in half and brush with olive oil. Sprinkle with a little salt and pepper and grill until grill marks appear and squash is tender but not too soft.

Summer is also the best time for fresh tomatoes. If you’ve ever grown tomatoes in your garden, you know nothing can compare with a truly fresh summer tomato. There is almost no end to the wonderful meals you can create with fresh tomatoes. It’s the perfect time for salads, bruschetta, and salsas!
