This
month, travel with us to Mexico. Mexican cuisine offers a wide
array of flavorful recipes, many of which are naturally gluten-free
or that can easily be modified to be gluten-free.
Traditional
Mexican food is largely gluten-free unlike the processed American
version that has been manipulated, preserved and altered for mass
production.
The
abundant use of corn in Mexican cooking is a welcome friend to
those with Celiac disease or wheat intolerance. Even recipes that
call for flour tortillas can be substituted with corn tortillas
with wonderful results.

Cabo
San Lucas Rotisserie Chicken

Beans,
chilies, rice, corn, tomatoes, onions, peppers, pork, fish and
shellfish are the mainstay of traditional Mexican cooking. Just
as distinctive as are the abundant fresh vegetables and fruits,
so are the aromatic spices that lend their special signature to
Mexican foods. Anise seed, basil, cumin, chili powder, cilantro,
cinnamon, coriander, oregano, saffron, chilies and peppers add
their spicy flavors to numerous Mexican dishes. Dried chilies
like ancho, passilla, chipotle (smoked jalapenos) and fresh jalapenos,
poblanos or serrano chilies can easily change a bland recipe into
one with a Mexican flair. Many canned chilies and peppers can
also be found gluten-free. Next time youre looking for Mexican
ingredients, try a Mexican grocery store if available. There you
will find many foods in their more natural state, with less additives
and less possibility of having gluten included as an ingredient.
