Storing
Nuts, Nut Oils and Seeds
With
the exception of the peanut, nuts are the fruits of various trees.
They have a number of uses in cooking, adding flavor and texture
to various dishes from salads and stir frys to delicious
garnishes for risottos, pilafs and much more. They
are sometimes expensive and should be stored carefully to preserve
the flavor and prevent them from becoming rancid. Nuts that have
not been roasted or shelled will tend to last longer. Shelled
nuts should be stored in the refrigerator and freezer. This also
holds true for nut oils and seeds such as sesame seeds, poppy
seeds, celery seeds, and fennel seeds. Store them in the refrigerator
as well, to prevent from turning rancid. Periodically you should
check your nuts, seeds and oils to make sure that they are still
fresh.
