10 Meals in 30 Minutes

Many times, regardless of our good intentions, it’s just not feasible to prepare every meal from scratch. Those of us on a gluten-free diet find times like these more than just a little difficult or inconvenient. When the rest of the world can toss a frozen dinner in the oven or heat up a can of just about anything, we must be more creative or have had to plan ahead for just such an occasion.

To make times like these as easy as possible, there are some things you should have on hand that will enable you to prepare last minute gluten-free meals that don’t taste ‘last minute’.

Gluten-free Dried Pasta

One of the most versatile ingredients for a quick meal and a must have in your pantry is gf dried pasta. Our favorite brands are Bi-Aglut and Tinkyada. Bi-Aglut is available by mail order through Glutino.com and Tinkyada is widely available in natural food markets and heath food stores and health food sections of main stream grocery stores. A good idea is to pick up a couple of different varieties every time you shop. These pastas are available in many different shapes.

Gluten-free Pasta Sauce & Pizza Sauce

There are several different varieties of gluten-free sauces on the market. Muir Glen and Paul Newman’s are our favorites. When searching for these products, you will have the most luck if you search for organic products. These pasta sauces also come in many different flavors; garlic, onion, roasted garlic, balsamic vinegar to name a few.

Gluten-free Chicken and Beef Stock

An absolute ‘must’ to have on hand. We prefer the taste, peace of mind and economy of homemade stocks. Easy to make, we freeze 1 and 2 cup portions of stock in the freezer for future use. (For complete recipes for Chicken, Beef, Vegetable and Fish Stocks, visit our Recipe Archives)

Gluten-free Canned Chili

Canned Beans

We always keep our pantry stocked with a variety of canned beans. Black beans, kidney beans, garbanzo beans, and Great Northern or any type of white beans are great to have on hand and are a great way to add nutritional value to a quick meal.

Cheese

An assortment of cheese, especially Cheddar, Parmesan and Mozzarella, are perfect ways to top a recipe and to add flavor.

Bottled Minced Garlic

Bottled minced garlic will save you the time of chopping garlic and will keep in the refrigerator for weeks.

Bottled Roasted Red Peppers

Another great time saving product that will add wonderful flavor to an otherwise ordinary meal.

Chili Mac

Tubed Polenta

This is one of our favorite products. This product is organic, gluten-free, fat free, pre-cooked and does not need refrigeration until opened. The tube shape allows you to slice, fry or bake and serve, or you can dice or crumble it, as we did for our ‘Tamale Pie’. Meats

Ground round, pork medallions, boneless/ skinless chicken breasts and beef fillets will all pan-fry in just a few minutes. To pork, chicken or beef, just pan-fry, add shallots, a little chicken broth and a flavor ingredient (gf mustard, marsala, port, fruit, cream) and you’ve got a fabulous sauce in minutes.
