Broccoli Puree

 

Purees are a method of preparing and presenting vegetables that result in rich intensified flavors and colors. Purees are wonderful accompaniments to main courses and are fun to combine two or three purees as a side dish.

Purees can be prepared in advance of your meal and stored in the refrigerator until ready to warm up and serve.

Try these vegetable purees with your favorite entrée;

Broccoli Puree

A beautiful bright green puree with incredible taste. This is now my husband’s favorite way to eat broccoli. Pureed broccoli is combined with Crème Fraiche, Parmesan cheese and nutmeg and then baked in the oven.

Leek & Potato Puree

A delightful change from mashed potatoes. The leeks give these potatoes an almost sweet flavor.

Garlic Puree

Garlic puree is a fabulous addition to any number of recipes. With only one ingredient, garlic, it is a snap to prepare and will store for weeks in the refrigerator.

Tomato Puree

Tomato puree is a little lighter in consistency to processed tomato paste but a world apart in flavor. Tomato puree bursts with the taste of fresh tomatoes.

One of the most beautiful foods we have every prepared. The apples lend a wonderful sweet taste to fresh beets and the beets provide an earthy underlying flavor.
