Several
years ago, my husband stumbled upon the Atkins diet. It seemed
a good fit for him since he enjoyed eating meats and other
high protein foods anyways. I have to admit, I resisted this
diet and feared for his health. After all, havent we
been taught since the dawn of time that humans need a balanced
diet of meat, fish, vegetables, dairy and grains! Subsiding
on a diet of bacon, eggs, steaks and cheese seemed like a
recipe for disaster. I had images of spending my time in the
hospital taking care of my husband after quadruple bypass
surgery! My husband discussed his low-carb diet plans with
his doctor and decided to give it a try. Interestingly enough,
after following the diet, he not only lost significant weight
but his blood pressure and cholesterol levels decreased. I
still cant say with certainty that a low-carb diet is
"healthy", but I can say that my husbands
health seems to have improved, his excess weight has come
off, and generally speaking he says he feels better. I know
that many other people have found similar results with low-carb
diets. In fact, many of Glutenfreeda.coms subscribers
have expressed an interest in discovering new recipes that
are not only gluten-free but also low in carbs.
For those of you not so familiar with a
low-carb diet below is a list of acceptable foods:

content)
