Low Carb & Gluten-Free!

Several years ago, my husband stumbled upon the Atkins diet. It seemed a good fit for him since he enjoyed eating meats and other high protein foods anyways. I have to admit, I resisted this diet and feared for his health. After all, haven’t we been taught since the dawn of time that humans need a balanced diet of meat, fish, vegetables, dairy and grains! Subsiding on a diet of bacon, eggs, steaks and cheese seemed like a recipe for disaster. I had images of spending my time in the hospital taking care of my husband after quadruple bypass surgery! My husband discussed his low-carb diet plans with his doctor and decided to give it a try. Interestingly enough, after following the diet, he not only lost significant weight but his blood pressure and cholesterol levels decreased. I still can’t say with certainty that a low-carb diet is "healthy", but I can say that my husband’s health seems to have improved, his excess weight has come off, and generally speaking he says he feels better. I know that many other people have found similar results with low-carb diets. In fact, many of Glutenfreeda.com’s subscribers have expressed an interest in discovering new recipes that are not only gluten-free but also low in carbs.

For those of you not so familiar with a low-carb diet below is a list of acceptable foods:

Meats:

Beef, Veal, Venison, Pork — Ham, Bacon, Lamb, Rabbit (all meats)

Poultry:

Chicken, Cornish Hens, Duck, Goose, Pheasant, Quail (all poultry)

Fish & Shellfish:

Cod, Flounder, Bass, Bluefish, Catfish, Mahi-mahi, Herring, Mackerel, Orange Roughy, Red Snapper, Salmon, Sole, Swordfish, Trout, Tuna, Whitefish, Shrimp, Crab, Clams, Lobster, Mussels, Oysters, Squid, Scallops, Octopus (all fish)

Eggs & Cheese:

Eggs (any style), Asiago, Parmesan, Parmigiano, Provolone, Cheddar, Gouda, Goat, Feta, Fontina, Cream Cheese, Gruyere, Mozzarella, Monterey Jack, Muenster,Swiss (general rule of thumb — 1 oz. of cheese as 1 gram of carbohydrate content)

Soy:

Tofu

Fats & Oils:

Butter, Cream, Sour Cream, Half & Half, Unsweetened Whipped Cream, Mayonnaise, Canola Oil, Corn Oil, Sesame Oil, Olive Oil, Safflower Oil, Soybean Oil, Walnut Oil, Flaxseed Oil

Salad Vegetables: (figure 3 cups loosely packed per day)

Alfalfa Sprouts, Romaine, Sorrel, Watercress, Radishes, Peppers, Mushrooms, Mesclun, Parsley, Cucumber, Cabbage, Celery, Arugula, Endive, Chicory, Lettuce, Fennel, Jicama

Other Low-Carb Vegetables: (figure 1 cup per day — replaces salad vegetable serving)

Artichoke hearts, Asparagus, Avocado, Broccoli, Brussel Sprouts, Cauliflower, Eggplant, Green beans, Green onions, Kale, Leeks, Okra, Pumpkin, Snow Peas, Spinach, Swiss Chard, Tomato, Turnips, Zucchini

Herbs & Spices:

Basil, Chives, Cilantro, Dill, Garlic, Ginger, Oregano, Rosemary, Thyme, Tarragon, Sage, Paprika, Pepper, Cumin, Cayenne pepper, Chili powder

Breakfast:

Eggs — any style

Italian Sausage

Omelets — add your favorite meats, cheeses and fresh herbs

Mexican Egg Skillet — omit tortillas

Lunch:

Bacon & Leek Quiche (crustless)

Egg Salad

Fajita Salad

Sauteed Onion Mushroom Burger

Salads & Soups:

Asparagus, Mixed Greens & Parmesan Salad

Cream of Asparagus Soup

Cream of Broccoli with Cheddar Cheese

Grilled Chicken Salad with Asparagus

Miso Soup

Mixed Greens with Fried Shallots

Roasted Eggplant Soup

Salmon Caesar Salad — omit French bread

Simple Chopped Salad
