Potatoes — 10 Great Ways!

In honor of St. Patrick’s Day we thought it appropriate to pay homage to the versatile root vegetable…the potato! Potatoes are a great side dish or even main dish plus they are also good for you. Not only are they low fat and cholesterol free, but they are also high in vitamin C and potassium and a good source of vitamin B6 and dietary fiber! Imagine all that just from a simple spud!

There are many different types and varieties of potatoes and some work better for different recipes depending on how they are cooked. Below you will find a simple chart to help you decipher which potato is right for your next potato dish:

Russet Burbank, Russet Arcadia, Norgold Russet, Goldrush, Norkotah, Long White (or White Rose or California Long White), and Idaho

Baking, mashing or French Fries

Light and fluffy baked, light and creamy mashed, and really, the only potato worth frying.

Round White, Round Red, Yellow Potato, Red Potato, Salad Potato, La Soda, Red La Rouge, Red Pontiac, Red Nordland, Red Bliss, Yellow Finnish, Ruby Crescent, and Australian Crescent and New Potatoes

Boiling, roasting or grilling. Ideal for soups, casseroles, potato salad, roasting, and barbecuing because of their tendency to hold their shape.

Boiling potatoes (waxy potatoes) are firmer when cooked than baking potatoes. You can mash them, but instead of smooth and creamy, the results tend to be thick and lumpy.

Yukon Gold, Peruvian Blue, Superior, Kennebec, and Katahdin

Great for roasting, pan frying, and using in soups, stews, and gratins. They can be baked, mashed, and fried, but will not produce the same results as the baking potato.

More moist than baking potatoes and yet will still hold together in boiling water.

This month we would like to share our favorite top 10 potato recipes! It was a difficult choice since the potato recipes extend from breakfast to appetizers to side dishes and main courses! We hope you enjoy these superb spud recipes as much as we have!

1) Boxdy — A traditional Irish dish. These potato pancakes are great with fried eggs!

2) Baby Red Potatoes Stuffed w/Roasted Garlic & Herbs — A great, simple appetizer! These bite-size potatoes can be stuffed with roasted garlic & herbs as the recipe indicates but you can also vary things by stuffing them with a variety of toppings such as crème fraiche & chives, sun-dried tomatoes & pesto or even crème fraiche & smoked salmon!

3) Baked Potato Soup — This delicious soup is exactly like what it is titled…a baked potato with all the fixin’s in the form of a comforting soup!

4) Champ (Mashed Potatoes with Green Onions)— Again an Irish favorite, these mashed potatoes are fluffy and full of flavor! The secret is lies in the green onion steeped in cream! Sinfully delicious.

5) Mushroom Potatoes — Don’t be fooled by the name…these baby new potatoes are simply shaped like mushrooms and then roasted. Very delicious and are sure to provide that extra special touch to your next entertaining menu.

6) Potato & Thyme Gratin — This simple gratin is not only delicious but relatively low in fat — no cream here…the moisture comes from gf chicken stock!

7) Potato Gnocchi with Pesto — A little work, but well worth the effort. If needed to save time you can purchase store bought gluten-free pesto.

8) Potato Lasagna with Sauteed Mushrooms — An elegant entertaining dish with an spectacular show-stopping presentation backed up by amazing flavor!

9) Spanish Tortilla — Perfect for a tapas party…slice into wedges and serve this simple, yet delicious egg and potato dish along with other tapas.

10) Perfect French Fries — We couldn’t complete the top 10 potato recipe list without including the American favorite…French fries! These French fries are absolutely perfect — crunchy on the outside and soft on the inside!
