There is just something about macaroni and cheese and it doesn’t seem to matter if you’re young or old. Maybe it’s just the classic comfort food. To many of us, it seems the perfect meal when the body or soul needs soothing. And children…enough said. Children instinctively adore macaroni and cheese.
Macaroni and cheese is a simple dish to make; by just about anyone’s standards. And, with the availability of gluten-free pasta in macaroni shape, gluten-free macaroni and cheese is equally as simple. Basic macaroni and cheese begins with a cheese sauce. A cheese sauce is made by sautéing onions in butter, then adding a little gluten-free flour to create a roux. Next step, add milk and stir until it comes to a boil and thickens. Remove from heat and add cheese and stir until cheese is melted and you have a silky cheese sauce. Pour over cooked pasta, bake, and you’re there.
