This time of year finds the Pacific Northwest in a state of mild schizophrenia as it changes day to day from snow storm where temperatures can drop to 19 degrees F to glorious blue skies and sunshine bringing the temperature up to the 40’s to 50’s in just 24 hours. The weekend before last, we had beautiful, sunglass wearing weather and spent the weekend readying the garden, cleaning out pots and rockeries and making way for the daffodils which are already poking their little heads out of the ground. Last weekend, we hunkered down with a fire and caught up on our reading while we were bombarded with 6” of snow, overcast skies and howling wind. It’s hard after a weekend like that to imagine that in just a few short weeks spring will have officially arrived in all its anticipated glory.
But arrive it will and a sure sign is one of springs first crops, asparagus. As a tribute to this delicious vegetable, we’d like to suggest some of our favorite asparagus recipes for any occasion. With this variety, there will be no danger of getting tired of eating asparagus through the season! Asparagus is exquisite as a stand-alone vegetable simply garnished with light seasonings or as part of dish where its unique flavor and texture complete the meal.
