Looking for a quick, delicious meal for lunch or dinner?
Consider a quick pasta dish for a complete one-dish meal. If you are newly
diagnosed or new to a gluten-free/wheat-free diet you have undoubtedly
encountered some not-so-authentic tasting pasta. There is good news. There
are some really good gluten-free pasta’s available on the market.
Our favorite is Le
Veneziane. This is an imported
Italian pasta made from corn. It
is the most authentic gluten-free pasta we’ve tried. Unfortunately it is not available at
grocery stores but can be purchased on-line at www.quattrobimbi.com. This pasta is available in several
different styles including fettucini nests.
Tinkyada (www.tinkyada.com - available at well-stocked natural
food stores) makes great tasting pasta made from brown rice and water. It
holds up very nicely as it cooks and it doesn’t taste "gritty" or
"slimy", but does discolor the cooking water with a lot of starch.
Our other favorite gluten-free pasta is Bi-Aglut. Bi-Aglut (available through
Glutino - www.glutino.com) also tastes very close to
wheat-based pasta’s.
When putting together
a great tasting, one-dish pasta meal take advantage of leftovers in your
refrigerator. Often you can find leftover steak, chicken, pork or even fish
that will make a wonderful addition to a quick and easy pasta dish. Other
great ingredients to look for are cheeses, fresh produce, roasted peppers,
nuts, garlic, cream, butter , fresh herbs, tomato sauce, pesto and even
salsa.
