Roasting
Peppers
There is nothing
like the aroma of roasted red peppers! Roasted peppers add a smoky
layer of flavor that cannot be duplicated by anything else. The
sweet crisp taste of fresh red bell pepper becomes completely
transformed when roasted into a sultry, smoky almost seductive
ingredient. OK, maybe not seductive, but undeniably delicious
at the very least. Roasting a pepper is the easiest way to remove
the skin, soften the pepper and to produce that incredibly smoky
flavor.
To roast a
pepper in the broiler:
Preheat your
oven to broil. Place whole peppers on a dry baking sheet and broil
until the skin turns brown to black. Turn the peppers and broil
until all sides are blackened. Remove peppers from the oven and
place immediately in a small paper bag, or in a bowl. Close the
bag or cover the bowl with a towel. Set aside for 10 minutes.
The heat from the peppers will create steam that will separate
the skin from the flesh.
Place the
peppers on a cutting board and peel off the skin. The skin should
peel away easily. Remove the seeds and the peppers are now ready
for use.
