Flank
steak is a wonderful cut of beef due to the fact that it is moderately
priced, and it has enough intramuscular fat to assure that the
meat stays tender. It is great for grilling, braising, pan-frying,
sautéing and stir frying. This month we are delighted to
share with our members some outstanding recipes for flank steaks.
For an Asian flair, try a simple, but delicious Beef
Stir Fry with Peppers. The wonderful flavors of ginger and
garlic along with the hot and sweet peppers provide a wonderful
contrast for this dish. For another wonderful Asian "one-dish"

Stuffed Flank Steak

For
a more elaborate use of the flank steak, consider serving your
guests a Cornbread Stuffed Flank
Steak. This recipe starts with combining gf cornbread with
a mixture of parsley, eggs, and chilis. The cornbread mixture
is then spread on the flank steak. The steak is then rolled into
a log and baked with a mixture of vegetables and broth. Truly
a divine, satisfying meal.
