Steak
with Pasilla Chili Sauce

As
the weather gets nicer, our thoughts turn more and more to outdoor
grilling, which makes us think more and more of the mouth-watering
taste of great steaks. We decided to satisfy our craving by celebrating
steaks in this special feature this month. (Alright, we actually
satisfied our craving last night with a traditional back yard
grill of Spencer steaks, baked potatoes and corn on the cob).

Grilled
Spiced Steaks with Onion Marmalade
|
One
of the greatest things about steak is its versatility. Besides
grilling, quick pan-frying, roasting, and broiling are all delicious
ways to prepare a melt-in-your-mouth steak.
When
selecting steak, choose a tender cut of meat. Almost all preparations
for steaks are done quickly and with hot heat. Fast, hot cooking
sears the outside of the meat allowing the meat to become flavorful
and browned and allows the inside of the steak to remain tender
and red to pink. Never cook a good steak to well done. If you
prefer your meat well done, select a different meal or cooking
method.

Our
favorite steaks are for grilling are New Yorks, Spencer steaks
and Rib Eyes. These steaks are usually tender without having a
lot of marbling of fat.
