A Mother’s Day Brunch They Can Make for Mom

Happy Mother’s Day to mothers everywhere! And to those Celiac moms, we wish you a very special gluten-free Mother’s Day, complete with a Mother’s Day brunch prepared by your family.

To assist those Mother’s Day chefs at your home, we’ve collected a few brunch ideas that are easy to make and are sure to bring a smile to Mom’s face.

Blueberry Muffins or Strawberry Bread with Strawberry Cream Cheese Spread

Game Plan:

  1. The night before Mother’s Day make the Chocolate Buttercream Squares and refrigerate.
  2. Prepare the Blueberry Muffins or Strawberry Bread and bake.
  3. Make and chill the Strawberry Cream Cheese Spread
  4. Cut up the fruit and chill
  5. Cut up and have ready all ingredients for omelets
  6. Fry pork medallions
  7. Cook omelets
  8. Serve

Both of these recipes are simple, easy to make and both are practically fool proof.

For the muffins, use a jumbo size muffin pan (6 muffins). There is no need to use muffin paper cups, just fill the muffin pan 3/4" full with batter and bake. Make sure to test for doneness with an inserted toothpick. The toothpick should come out clean. If it does not, reset a timer for 5 minutes, then check again.

Strawberry Bread

For extra-special looking muffins, lightly sprinkle the tops with a coarse sugar just before baking.

Our recipe for Strawberry Bread is always a winner. Use the extra juice from the thawed strawberries to make a delicious Strawberry Cream Cheese Spread. This spread is also wonderful with fresh fruit.

Omelets

Omelets are quite simple to make, in fact, they are basically just a prettier version of scrambled eggs. For a basic omelet all you need is 4 ingredients; eggs, salt, pepper and butter! Usually you should figure 3 eggs per person. Making omelets can be easily broken down into 6 steps:

  1. Beat the eggs well and season with salt and freshly ground black pepper.
  2. Heat the about 2 teaspoons of butter in a seasoned omelet pan over high heat, tilting the pan to coat the entire surface.
  3. Pour the egg mixture into the pan and scramble with a fork. Move the pan and the fork at the same time until the egg mixture has firmed slightly. At this point add your desired fillings.
  4. Let the egg mixture finish cooking without stirring.
  5. Tilt the pan and slide a fork or spoon around the lip of the pan, under the omelet, to make sure that it is not sticking. Slide the omelet to the front of the pan (towards the handle) and use a fork to fold it into the center.
  6. Turn the pan upside down, rolling the omelet onto the plate seam side down.

Here are some delicious filling ideas (filling is added in step 3 above):

Spanish diced yellow, red and green peppers, jalapeño’s, and jack cheese. Serve with guacamole, salsa and corn tortillas

Fresh herb omelet Add a variety of fresh herbs and your favorite cheese

Spinach omelet Spinach leaves sautéed with shallots and seasoned with nutmeg and salt

Ham & Mushroom omelet Sautéed sliced mushrooms and ham topped with Gruyere cheese

Seafood omelet Cooked shrimp, smoked salmon, caviar or a combination along with crème fraîche or sour cream and chives.

Sun-dried tomato omelet Diced meat (ham, turkey, sausage, etc.), grated sharp cheddar cheese, sun dried tomatoes and fresh herbs

Western omelet diced ham, red and green peppers, onions and sharp cheddar cheese

To simplify your preparations when making multiple omelets, make sure that you have all the ingredients prepped and ready. If you need to sauté your ingredients make sure that is done in advance, before you begin cooking the eggs. If all is prepped you should be able to serve each omelet in about 3 minutes or less.

Meat

If you want to accompany the meal with meat, try Fried Pork Medallions. For pork medallions, purchase thin cut medallions that are about 1/4" thick. Add about 1 Tablespoon oil (olive, vegetable or canola) to a large skillet over medium-high heat. Sprinkle both sides of medallions with salt or garlic salt and pepper. When oil is hot, add medallions to the pan fry quickly until browned on both sides. This should only take about 3-5 minutes per side. Because these medallions are thin, they will cook quickly and you just want to get a nice browning on the outside.

Fresh Fruit

Make a beautiful and colorful bowl of fresh fruit to serve with your brunch. Great fruit choices are:

  • Strawberries (wash and leave whole)
  • Cantaloupe (cut into 1" slices, discard seeds and cut fruit from rind; cut slices into cubes)
  • Honeydew melon (same as cantaloupe)
  • Watermelon (same as cantaloupe)
  • Red and or green seedless grapes (wash and add whole grapes)
  • Blueberries (wash and add whole blueberries)

What would a Mother’s Day Brunch be without a spectacular chocolate finish?

Chocolate Buttercream Squares is a perfect finish to a great meal and should be made ahead of time so it has a chance to chill. Easy to make, this yummy dessert can be made and refrigerated the night before Mother’s Day.
