I am the mother of two beautiful, fairly young, children. I am also a taxi driver, cleaning lady, nurse, chef, mathematician, English teacher, science teacher, counselor, advisor, and nurturer (24/7)….and that doesn’t even count my paying job! And I know I am not alone in this multi-talented, multi-tasked situation. For me, Mother’s Day IS a big deal because I like to look at it as a well-deserved day off – a time to relax, a time to say, “I don’t feel like cooking”, a time to say, “I don’t feel like cleaning that up today”, etc. and I feel I can get away with this without guilt – for one day.
Now because I do have the job of personal chef, 364 days out of the year, and I do have the uncontrollable need to plan ahead, I’ve created 3 meals (breakfast, lunch & dinner) for this special day that I hope my loving family will prepare for me on this special day and perhaps if I’m lucky even clean up the kitchen! I’d like to share these menus (all simple to prepare) with our viewers, so that perhaps some other lucky mother might get a full day off with three delicious meals.
