One of the easiest things to make flawlessly gluten-free is
coffee cake. Just in time for
Mother’s Day or any day, a great gluten-free coffee cake can fool anyone into
believing that it is anything but gluten-free!
Easy to make, quick to bake and delicious to eat, with a
few simple tips, you can transform just about any ‘gluten’ coffee cake recipe
into the perfect gluten-free coffee cake.
Tips
for a perfect gluten-free coffee cake:
- Use no more
than 2 cups of gluten-free flour mix.
- We are partial
to Jule’s Gluten Free Flour, but there are
many on the market that are good substitutions
to wheat flour, cup for cup.
- Use 1 teaspoon
baking powder AND 1/2 teaspoon baking soda to give your cake lift.
- Use 1/2 cup
vegetable oil instead of butter.
- Use 3 large
eggs
- Use 1 cup gf yogurt, sour cream or buttermilk
For
Crumb Topping:
- Use no more
than 2 Tablespoons gf flour mix in the mixture
- For a great
oatmeal topping, add 1/3 cup of our Glutenfreeda all natural, certified gluten-free Instant Oats
- Sprinkle the
topping over the top of the cake after 40 minutes of baking, then
continue to bake for the remainder of specified time.
