into
a large stock pot. Cover the bones with water and add a small
carrot, a quartered onion and a celery stalk. Add a bay leaf,
1 teaspoon of dried thyme, some peppercorns and a sprig of parsley.

the top. Reduce the heat and simmer for 2 hours. Strain and let
cool to room temperature. Cover and refrigerate or freeze.
