What to do With the Leftovers?

What is Thanksgiving without leftovers? Leftover turkey can be put to many uses other than turkey sandwiches (which by the way we have a delicious recipe for!). This month we wanted to give you some creative ideas on how to make wonderful turkey dinners with those, often, abundant leftovers.

Turkey Fried Rice

Turkey Sandwich with Gravy

chilly winter evenings. And your kids will absolutely love the Turkey Casserole and the unbelievable Turkey Pot Pie.

And don’t forget the turkey carcass. Use the turkey carcass to make a wonderful turkey stock. Cut the rib and the back into several pieces. Throw the rib pieces, the wing bones, leg bones and thigh bones

Turkey Casserole

into a large stock pot. Cover the bones with water and add a small carrot, a quartered onion and a celery stalk. Add a bay leaf, 1 teaspoon of dried thyme, some peppercorns and a sprig of parsley. Bring the stock to a boil and skim off any foam that rises to the top. Reduce the heat and simmer for 2 hours. Strain and let cool to room temperature. Cover and refrigerate or freeze.
