It seems everyone has a handful of tried
and true recipes that are pulled out each year to make use
of all that left-over turkey.
This year we offer a collection of recipes
that will wake up left over turkey and transform it into sensational
meals that youll want to keep making all year long.
One of the first things we do with our left
over turkey carcass is to trim all the meat from the bone.
But dont toss out the bones! Place the bones in a stockpot,
cover with water and bring to a boil. This will be your secret
ingredient, homemade turkey stock, that will make all your
left over turkey recipes incredible! Skim off the scum from
the stock and reduce the heat to low. Add a couple of carrots,
celery stalks and an unpeeled onion, cut in half. When the
stock comes to a simmer, add about 10-12 whole peppercorns,
fresh parsley, thyme and a bay leaf. Youre done! Let
the stock simmer for about 3-4 hours. We only simmer our turkey
stock using cooked turkey bones for 3-4 hours instead of the
usual 6 hours for stock, because the turkey has already been
cooked once.
We realize that the day after Thanksgiving
is reverently reserved for reheated Thanksgiving dinner #2.
But once that is out of your system, its time to turn
up the dial and spice it up with Turkey
Curry, the perfect satisfying topping for rice or
mashed potatoes. This creamy dish is full of flavor and is
sure to become a family favorite.

and milk reduces the fat without compromising the full-bodied
consistency. This is a soothing and savory soup with an extraordinary
nuance of fresh mushrooms.
Sausage
and Turkey Stew will surprise you with its robust
flavor. The sausage is a perfect match for the subtle taste
of turkey.
And last but not least, is our favorite,
Turkey
Chili. This delicious chili is made with pureed
corn and black beans and just the right amount of heat.
