The secret to our success in many of our
baked goods is The
Gluten Free Pantrys Country French bread flour mix.
This flour mix works perfectly a great substitute for wheat
flour. We still make some modifications to improve the consistency,
like adding an extra egg (in most cases) and increasing the
amount of fat (typically vegetable or canola oil) and adding
something to add the right amount of moisture (usually yogurt,
buttermilk, applesauce, crème fraiche, sour cream,
etc.).
