Holiday "Apps" — Great Hors D’oeuvres for the Holidays!

The holidays are always a very busy time. Not only are they usually filled with the big production of a large feast for family and friends but often there are parties or even impromptu guests or gatherings that inevitably pop up — at least this is the case at our house. If you’re like us, you are always on the hunt for quick and delicious appetizers that you can prepare in an instant or at least appetizers that can be prepared well in advance.

This month we’d like to offer you both — quick and easy appetizers and a few appetizers that you can prepare in advance. All of these appetizers are absolutely delicious - and certainly don’t taste "gluten-free". They will be enjoyed by all — those with or without gluten intolerance.

Quick and Easy Appetizers
Smoked Salmon Plate — Decorate a platter with a scoop of whipped cream cheese, smoked salmon slices, sliced tomatoes, capers, red onion slices and gf crackers.
Roasted Red Peppers with Fresh Mozzarella — Place tomatoes and mozzarella on top of roasted red peppers, sprinkle with salt and pepper and drizzle oil and vinegar over the top.
Asparagus Wrapped Prosciutto — Mix cream cheese with roasted garlic and spread on Prosciutto slices, sprinkle with peppercorns and roll around two blanched asparagus spears.
Mozzarella Wrapped in Prosciutto - Thread mozzarella balls and a sun-dried tomato on to stripped rosemary stems. Wrap mozzarella skewers with Prosciutto.
Parmesan Popcorn - Pop corn in an air popper and season with butter, parmesan cheese, salt and pepper.
Polenta with Smoked Salmon - Cut prepared polenta into rounds and brush with olive oil. Place under the broiler and brown on both sides. Spread whipped cream cheese on each polenta round and top with a slice of red onion and smoked salmon. Top with a dill sprig.
Prunes and Smoked Mozzarella Wrapped in Prosciutto - Place a piece of cheese on top of a prune and wrap it with Prosciutto. Secure each piece with a toothpick. Broil until Prosciutto gets crispy and cheese melts.
Salmon and Dill Quesadillas - Top corn tortillas with cheese. Top each with shallots and smoked salmon and sprinkle each with a little fresh dill. Cover with remaining tortillas. Combine sour cream, fresh dill and season to taste with salt and freshly ground black pepper. Fry quesadillas in oil until browned on both sides. Transfer to a cutting board and cut into fourths. Serve with dill sour cream and garnish with a small sprig of dill.
Lemon Ginger Marinated Shrimp - Combine garlic, ginger and cilantro; puree and add lemon juice, gf soy sauce, and olive oil. Toss shrimp with marinade and refrigerate for about 30 minutes. Transfer shrimp from marinade to sauté pan and cook for 2 minutes on each side.
Mini Beef Filets with Horseradish Crème Fraiche — Sear a beef tenderloin filet and serve topped with homemade horseradish sauce on a gf crostini.
Bruschetta — Combine tomatoes, garlic, basil, a small amount of mint, shallots, olive oil and salt and pepper. Spoon mixture on toasted crostini.
Make Ahead Appetizers:
Smoked Salmon Cheesecake — A delicious cheesecake with smoked salmon and red peppers. Serve with gf crostini or gf crackers.
Shrimp Remoulade — Shrimp cooked in a brine solution made up of lemons, onions, chili peppers, garlic and herbs. Serve shrimp with a remoulade sauce — a slightly spicy, very flavorful dipping sauce.
Spinach & Artichoke Dip — A guaranteed hit. A delicious blend of spinach, artichokes and cream cheese. Perfect with gf tortilla chips.
Sun-Dried Tomato & Pesto Torta — An awesome combination of cream cheese, sun-dried tomatoes and pesto make this torta a beautiful, tasty dish to serve.
Lemon-Cumin Chicken Meatballs — These will disappear faster than you can imagine. An unusual combination of lemon and cumin make these chicken meatballs somewhat addictive. Make the meatballs up in advance and brown before serving.
