Soups and Stews

It’s time to shift our culinary thoughts to foods that warm the heart as well as the soul. And what could be more perfect than a soup or stew, brimming with fall vegetables? This month we’ve selected a collection of less traditional soups and stews that will and delight and sometimes surprise your entire family.

Soups

Italian Sausage Soup is a hearty soup that gets its spicy flavor from our homemade Hot Italian Sausage. We’ve combined our homemade Chicken Broth with dried gluten-free pasta, diced tomatoes, onion and shredded Parmesan cheese to create a delicious soup that can be served as a main course. Serve with a loaf of crusty Gluten-free French bread!

Our Cream of Broccoli with Cheddar Cheese is an elegant soup with the essence of broccoli and a hint of cheddar. Savory and sophisticated, this soup is a perfect first course for a special romantic dinner or entertaining for guests.

Potage au Pistou is a warming soup that can either be served as a main course or as a delicious first course. Simple to prepare, by boiling the chicken stock and adding diced potatoes, green beans and gluten-free vermicelli. Top finished soup with a mixture of basil, garlic and olive oil. Just before serving, add shavings of Gruyere cheese. So simple and so delicious!

 

Stews

Stews are generally made by cooking pieces of beef or lamb in liquid; broth or wine, and combined with vegetables, herbs and spices. We have three very different versions of ‘stew’ we’re sure you will enjoy.

Blanquett de Boeuf is the perfect comfort food for those brisk fall evenings. A delicious white stew, Blanquett de Boeuf is comprised of tender stew meat, onion, and mushrooms. The unusual, but simply divine base for this stew is a home-made stock made from vegetables, beef, Vermouth and Calvados (an apple brandy – yes, it’s gluten-free). Serve this savory stew over buttermilk mashed potatoes for a perfect fall or winter meal.

For a completely different stew, try Halibut Lemon Cream Stew. This stew almost defies description. Its sauce is velvety smooth, yellow in color with a hint of fresh lemon. The sauce is made by preparing a fish stock from fish bones and vegetables. This stock is then added to a sinful mixture of egg yolks, cream and lemon juice. The halibut is broiled for a few minutes then placed in individual bowls. This unbelievably delicious and rich sauce is then poured over the halibut. Truly a superb stew.

We take you to the Caribbean for this stew, Red Bean and Pork Stew. Aromatic flavors surround this mixture of pork, red beans and vegetables. Spiced with cinnamon and garlic, this stew takes on an island flair and marries its spicy flavors with onions, green peppers, and potatoes. Unique and hearty, serve this dish as a main course.
